Phoenix Oyster: Why It’s Special
Phoenix Oyster (also known as summer oyster or Indian oyster) is prized for its tolerance of warmer fruiting temperatures, its delicate, slightly sweet flavour and its velvety texture. It handles warmer conditions better than many other oyster species, it’s a popular choice for growers who want a reliable crop through the warmer months.
Shelf life: Dry them immediately after harvest and store them in airtight container.
Growing Conditions
Humidity: 85–95% during pinning and fruiting. Phoenix Oysters respond well to steady moisture for generous caps.
Light: Indirect ambient light is fine. A normal day and night cycle helps develop proper cap shape and colour.
Air: Regular fresh air exchange to prevent long stems and promote robust caps. Many producers aim for CO₂ below 1000 ppm during fruiting.
Temperature: 14°C–24°C.
More Than One Harvest?
Yes. Multiple flushes are possible, depending on your growing conditions.
Common Mistakes to Avoid
Low humidity: Oyster pins and caps need steady humidity. Drying out during pinning causes aborted pins or small caps.
Poor fresh air exchange: Too little fresh air leads to long, thin stems and poor cap development, while sudden strong drafts can dry the surface.
What if pins form inside the bag?
Don’t worry. Ignore the internal pins. Gently fold the top of the bag to push out excess air, cut a small X in the side of the bag where you want the mushrooms to grow, and begin misting that spot daily. Mushrooms will start fruiting from that cut, and the internal pins will be naturally aborted as they don’t have space to grow.
All mushrooms produce spores as part of their natural growth cycle. Some people may be sensitive or allergic to spores, so be mindful of where you grow them. Harvesting earlier, as the caps begin to flatten, will help you avoid heavy sporulation.
